Gluten-Free Moist and Delicious
Apple Pineapple Cake
Here is a delicious and easy to make
dessert that is gluten-free
and also uses no refined table
sugar. You are sure to love the
moist texture and a taste that is
similar to pineapple upside
down cake.
Ingredients:
2 eggs (preferably organic cage free
eggs)
1 3/4 cups coconut sugar (or raw honey)
2 heaping teaspoons cinnamon
1/2 cup oil
3 cups of pineapple chunks
2 1/4 cups of applesauce
2 or more cups gluten free pancake mix
1 3/4 cups coconut sugar (or raw honey)

2 or more cups gluten free pancake mix
(or all purpose gluten
free flour or coconut flour*)
2 teaspoons baking soda
2 teaspoons baking soda
*If you use coconut flour, add
one egg, another teaspoon of
baking soda and two teaspoons of
cream of tartar.
(As always, choose organic content
and fresh content as much
as possible for the healthiest
recipe. Also, wash all fruits and
vegetables before cutting or adding
to the recipe.)
